Railtown Cafe Howe Street Location Seeks Chef de Partie
Reporting to the Sous Chef, this individual will be responsible for small-scale production at the Cafe and work alongside a small team who will also assist in opening and/or be closing the facility. We are seeking a motivated, positive individual who is comfortable working in a fast-paced environment and who demonstrates a can-do attitude, strong work ethic and high standards of quality and cleanliness. The CDP is someone who is able to guide the team and hold them accountable to these same standards.
The CDP will be hired on a full-time hourly contract of 15/hour plus tips. The tip pool averages $2/hour based on sales and guest experience. Any overtime will be paid after 40 hours worked. Our other benefits of working with Railtown Cafe include a daily staff meal allowance of $12 worth of menu items excluding retail items such as ice cream, coffee beans, and alcohol. Beverages such as drip coffee, tea, daily juice, and lemonade are free during your shift. Any specialty coffees or beverages are available at a 50% discount. This 50% discount is also available to you and your partner or immediate family at the location you work at. This 50% discount is not for takeout, dine in only. Lastly, we provide a uniform service with clean cook shirts, pants, aprons and kitchen towels. You will be required to bring your own kitchen knives and chef shoes.
You would train with our Sous Chef one on one. Your training would last two full weeks. You would train on Salads, Sandwich and eventually Expo Station. We would provide you with our menu assembly package and all training material to ensure you knew and could follow Railtown Cafe and Catering standards and policies.
After your 3-month probationary period is up we would conduct your employee performance review. This would give us a chance to discuss your progress. We also will conduct a 6-month review and talk about any room for growth within the company. After six months of employment, we would conduct your reviews annually. If you choose you can work your way up within our Café and Catering team. We strongly encourage our staff members to grow with us. There are always opportunities to move to other locations, into cafe production at our headquarters or to help out with events or catering.
Duties and Responsibilities:
-Monitor and ensure that standard kitchen operating procedures are met
Support and manage prep for service; ensure all prep items and recipes are made to standard
-Oversee the line during service while monitoring cooks’ progress and flow of service
-Oversee the flow of the kitchen and the flow of food to maintain service standards
-Assist monitoring the receiving of all product to ensure it meets restaurant standards
-Assist in the ordering as needed
-Responsible for prepping, assembling, cooking and cooling of all food products to
Railtown Cafe recipe guidelines and health code specifications.
-Prepares a variety of cold prep items for all batch cooked items, sauces, soups, stews, all pre-cooked items and partially cooked items.
-Washes, peels, slices and mixes vegetables, fruits or other ingredients. Portions and arranges food on serving dishes.
-Responsible for all stove, oven, and fryer cooking. Properly portions all food items such as chicken, meats, and/or vegetables prior to cooking/serving.
-Carefully wraps and stores all food items, labels all stored items, and ensures proper product rotation using first in/first out procedures (FIFO).
-Maintains proper organization and the highest level of cleanliness of all food storage and preparation areas including cleaning dishes and the dish area.
-Maintains cleanliness and upkeep of kitchen and equipment at all times.
-Responsible for communicating openly and thoroughly with Sous Chef and Upper Management, and for bringing any and all concerns to upper management attention immediately.
Knowledge, Skills, and Abilities
-2+ years of related (high volume) experience required
-1+ years of entry-level management experience required
-Basic computer skills are required
-Able to place food orders via email and use dropbox
-Proven ability in teaching and mentoring kitchen employees
-Exceptional communication and supervisory skills
-The applicant must be a Canadian resident or have a valid working permit.
-High school graduate or equivalent desired culinary school or equivalent work experience desired
-Basic knowledge of kitchen equipment and procedures, safety and sanitation regulations, and knowledge of food and food production
-FoodSafe Level 1 Holder
-General knowledge of food items, spices, ingredients
-Must be able to read and execute recipes (in grams)
Physical Demands
The physical demands for this position are seeing, hearing, speaking, reaching, frequently lifting up to 25 pounds, occasionally lifting up to 100 pounds, sitting, standing, for 4 to 8 hours, bending, squatting, and moving intermittently during working hours.
